Spicy Peanut Sauce with Potstickers
Ingredients
Spicy Peanut Sauce
- ½ cup creamy peanut butter
- 1 tbsp rice wine vinegar
- 1 tbsp toasted sesame oil
- 2½ tbsp soy sauce
- 1½ tbsp sriracha
- 1 clove garlic, finely chopped
- 2 tsp honey
- 1 tsp ginger, freshly grated
- Zest of ½ a lime
- Juice of 1 lime
- ¼ cup hot water
Potstickers
- Vegetable oil, for frying
- 1 (16 oz) pack bibigo™ Potstickers (Choose your favorite bibigo Potsticker flavor)
Garnish
- Scallions, thinly sliced
- Roasted salted peanuts, chopped
- Red pepper flakes, crushed
For the Spicy Peanut Sauce:
- In a medium bowl, whisk together sauce ingredients. Add ¼ cup of hot water, adding more as needed, until sauce is creamy and desired consistency is reached.
For the Potstickers:
- Pour a generous amount of vegetable oil into a nonstick pan over medium heat. Place about 7 bibigo™ Organic Chicken & Vegetable Potstickers in the pan leaving enough space between them. Cook according to package directions.
To Serve:
- Plate potstickers with a bowl of the spicy peanut sauce for dipping in the center. Sprinkle with scallions, peanuts, and crushed red pepper flakes to garnish.
