Crispy Skirt Dumplings

Ingredients

1 package Bibigo Chicken & Vegetable Steamed Dumplings
1 tbsp olive oil
¼ cup scallions, chopped
1 tsp flour
150g spinach
½ cup water
1 tsp salt

  1. Add spinach and water into food processor to puree. Use a fine sieve to extract ⅓ cup of the juice.

  2. In a small bowl, add spinach juice, flour, and salt. Stir to mix well.

  3. Preheat a nonstick pan over medium heat and add the olive oil. Arrange the dumplings into the pan and add the spinach mixture. Cover with lid and cook for 6 minutes until water evaporates.

  4. Remove lid and cook until bottom is crisp. Turn off heat. Place a flat plate over the skillet and quickly flip the skillet upside down.

  5. Sprinkle scallions to garnish.
