4 oz onion, thinly sliced
4-5 clove garlic, minced
8 oz assorted mushrooms (shiitake, beech, oyster, enoki, etc.), thinly sliced/separated
6 oz baby bok choy, separated and/or napa cabbage, cut into small pieces
2.5 oz sweet potato glass noodles
1 tbsp soup soy sauce
½ tbsp fish sauce
Black pepper
2-3 scallions, cut lengthwise into thin slivers
1 red jalapeño or fresno chili, thinly sliced (optional)
5 cup warm water
4-5 dried shiitake mushrooms
4 x 6 inch dried dashima/kelp
