Go-Chu-Jang Roasted Acorn Squash & Mandu

Ingredients

¼ cup Bibigo Hot & Sweet Go-Chu-Jang Sauce
2 tbsp soy sauce
2-3 clove garlic, minced
1 ½ tsp ginger, grated
2 tbsp maple syrup
½ tbsp sesame oil
1-2 tbsp olive oil
1 medium acorn squash, cut into 1-inch slices
10 whole scallions, ends trimmed
20 Bibigo Pork & Vegetable Mandu
Sesame seeds
Chopped scallions

  1. Whisk together Bibigo Hot & Sweet Go-Chu-Jang Sauce, soy sauce, garlic, ginger, maple syrup, and sesame oil until combined. Set aside.

  2. Preheat oven to 425°F. Coat a rimmed baking sheet with a thin layer of olive oil.

  3. Toss acorn squash slices and Bibigo Pork & Vegetable Mandu with a drizzle of olive oil and half of the spicy go-chu-jang sauce mixture. Spread them evenly on the baking sheet. Bake for 20-25 minutes, tossing halfway through, until acorn squash is tender and Mandu is golden brown.

  4. Rub whole scallions with a drizzle of olive oil and add to the baking sheet with 3-5 minutes remaining of the final cook time.

  5. Once cooked, serve with remaining sauce. Garnish with sesame seeds and additional scallions as desired.
