Mandu Kalguksu

Ingredients

½ cup minced beef
2 tbsp chopped scallions
1 tsp minced ginger
½ tbsp soup soy sauce
1 tsp cooking wine
½ tsp ground pepper
½ medium onion, sliced
4 pieces thinly sliced ginger
2 scallions
1 tsp salt, plus more to taste
1 tbsp soy sauce
8 cup beef stock or dashi
12 Bibigo Beef & Vegetable Mandu
200 g kalguksu noodles
1 cup sliced zucchini
Scallions, for garnish

  1. Combine minced beef, scallions, ginger, soup soy sauce, cooking wine, and ground pepper in a bowl and mix well.

  2. Heat a non-stick pan over medium-high heat and add cooking oil. Sauté the beef until fully cooked, about 3 minutes. Remove from heat and set aside.

  3. Add beef stock in a large pot and bring to a boil over high heat. Add onion, ginger, scallion, soy sauce, and salt. Reduce to low heat and simmer for 5 minutes until onions start to become translucent. Add zucchini, Bibigo Beef & Vegetable Mandu, and kalguksu noodles and continue to cook for 5 minutes until Mandu float to the top.

  4. To serve, divide evenly between two bowls and top with sautéed beef and chopped scallions.
