Korean BBQ Beer Ribs
Ingredients
1 (2 lb) St Louis style ribs
1/4 cup bibigo™ BBQ Sauce Original, plus more for braising
1 can of light beer, divided
1 tablespoon crushed red pepper
1 tablespoon kosher salt
1 tablespoon black pepper
- Salt and pepper ribs and set aside. Mix remaining ingredients and 1/2 of beer (save other half) in a large tray, place ribs in tray and cover. Let marinate for 24 hours.
- Preheat grill to 350°F and let char and caramelize. Flip and baste ribs and let cook for about 30 minutes. Remove ribs from grill and brush once again with bibigo™ BBQ Sauce Original and pour remaining beer on ribs, wrap ribs tightly in foil. Place ribs back on grill and close lid, raising temperature to 375°F for another 30 minutes.
- Turn heat down to 250°F and unwrap ribs, baste again and let cook for another 30 minutes. Cook until the internal temperature of ribs are 175°F. Remove and let rest, slice and serve. Cook thoroughly to an internal temperature of 165°F as measured by a food thermometer.
