Korean BBQ Beer Ribs
Ingredients
1 (2 lb) St Louis style ribs
1/4 cup Bibigo BBQ Sauce Original, plus more for braising
1 can of light beer, divided
1 tablespoon crushed red pepper
1 tablespoon kosher salt
1 tablespoon black pepper
- Salt and pepper ribs and set aside. Mix remaining ingredients and 1/2 of beer (save other half) in a large tray, place ribs in tray and cover. Let marinate for 24 hours.
- Preheat grill to 350°F and let char and caramelize. Flip and baste ribs and let cook for about 30 minutes. Remove ribs from grill and brush once again with Bibigo BBQ Sauce Original and pour remaining beer on ribs, wrap ribs tightly in foil. Place ribs back on grill and close lid, raising temperature to 375°F for another 30 minutes.
- Turn heat down to 250°F and unwrap ribs, baste again and let cook for another 30 minutes. Cook until the internal temperature of ribs are 175°F. Remove and let rest, slice and serve. Cook thoroughly to an internal temperature of 165°F as measured by a food thermometer.
