Korean BBQ Quesadillas
2 Flour Tortillas
1 tbsp Butter
1 cup Shredded Mozzarella Cheese
½ cup Kimchi
2 tsp Vegetable Oil
½ lb thinly sliced ribeye (or your choice of beef)
¼ cup bibigo™ BBQ Sauce Original
- If not already sliced, cut up your beef into bite size pieces and marinate in a bowl with bibigo™ BBQ Sauce Original.
- Heat up 1 tsp of vegetable oil in a small pan over medium heat. Add in your kimchi and stir fry for 3-5 minutes until browned and reduced. Remove from heat.
- Heat up remaining 1 tsp of oil in a medium pan over medium high heat and cook your meat until cooked through, about 3-5 minutes. Remove from heat.
- Heat half of butter in a large pan over medium high heat. Add a tortilla and cook on one side for 1 minute, then flip. Add half of shredded cheese and top with half of cooked beef and kimchi. Fold tortilla in half and cook until golden brown on both sides. Repeat for the other tortilla and serve hot with your favorite sauce or salsa. Cook thoroughly to an internal temperature of 165°F as measured by a food thermometer.
